If the dough springs back instantly, then it needs a few more minutes to rise. Lightly oil or flour a finger or knuckle, then give the dough a gentle but firm poke, as if you’re trying to get its attention. Try the poke test to test whether the dough is ready. Essentially, the gluten structure collapses as it bakes which makes it almost impossible for moisture to escape.
